March is National Nutrition Month and this year's theme encourages individuals to personalize their plate. Eating patterns are not one-size-fits-all because people have a variety of personal food and exercise preferences, schedules and cultures. America is a mosaic of cultures and people that create a beautiful design — individually and collectively. This is also true for food. In many cultures, food is a way to celebrate and show love; to mark traditions or milestones. In this presentation we will explore the history of some cultural foods, how to identify nutrition pitfalls in your own life and how to adapt. Blue Cross Blue Shield of Michigan is an inclusive and diverse company striving to continuously improve how we deliver for our members and represent our communities. Exploring and honoring cultural ties to food is one step in building healthier futures for all.

 

About the speaker:

Shanthi Appelö is a registered dietitian and health and wellness spokesperson for Blue Cross Blue Shield of Michigan. A native of Enköping, Sweden, she moved to Knoxville, Tennessee where she later earned a Bachelor of Science in Nutrition with a minor in Business Administration and holds a Master of Science in Public Health Nutrition from the University of Tennessee. Passionate about the science of nutrition and behavior, Shanthi has experience working in clinical nutrition, public health and teaching in the university setting. In her free time, she enjoys experimenting in the kitchen, exploring the outdoors, working on art and spending time with family.

Prior to her current position, Shanthi worked with communities facing food insecurity in Knox County, Tennessee for 7 years. She developed local policy, system and environmental interventions to promote health in food insecure populations, worked one-on-one providing medical nutrition therapy and cooking classes for a low-income HIV/AIDS clinic and served as a county-wide subject matter expert for obesity and Type 2 diabetes.
